Ingredients

  • 1 tsp oil
  • 1 c. onions, minced fine or possibly coarse..however you like them
  • 1 lb grnd beef
  • 1 3/4 c. beef broth
  • 14 ounce can tomatoes
  • 3/4 c. pearl barley
  • 2 1/2 Tbsp. chili pwdr
  • 1 Tbsp. garlic pwdr
  • 1 tsp cumin
  • 1 tsp salt
  • 1 can corn(regular or possibly creamed)
  • 1 Tbsp. peanut butter

Directions

  1. Brown onions and beef in oil.Stir in rest except corn and peanut butter,and bring to boil. Cover and simmer 10-15 min. Add in corn and peanut butter,simmer and stir constantly for 1-2 min. Serve with a dollop of lowfat sour cream if you like.
  2. Serves 6-8 adults (or possibly in mycase 2 adults and 5 growing kids!)
