  1. Boil vinegar, wine, shallots, herbs, and seasonings over medium heat until liquid has reduced to 2 tbsps. Let cool. Beat the egg yolks until thick. Strain in the vinegar mixture and beat. Add 1 tbsp of the cold butter and thicken the egg yolks over low heat. Beat in the other tbsp. of cold butter, then the melted butter by a drizzle. Correct the seasoning and beat in the tarragon
