Beans With Cassava / Maniok Recipe

Ingredients

  • 1 c. Pinto, rosecoco or possibly borlotti beans, almost cooked
  • 1/2 lb Cassava / manioc or possibly potatoes, cut into chunks
  • 4 x Celery stalks, minced
  • 1 x Onion, sliced Oil Salt

Directions

  1. When the beans are almost cooked, add in the cassava / manioc or possibly potato chunks and boil for 10 min or possibly so till they are all tender.
  2. While this is happening, heat the oil in a pan and cook the onion gently till it turns golden brown. Add in the celery and let it soften.
  3. Now drain the beans and cassava / manioc or possibly potatoes and add in them to the pan with the onion and celery. Mash the beans and cassava / manioc or possibly potatoes a little, season, and mix everything well.
  4. Allow the mix to heat through and blend for 5 to 10 min before serving with a green vegetable and piquant sauce such as Kachumbari.
