Ingredients

  • 2 c. cooked white beans garbanzos are really good
  • 1 tsp chopped garlic (1 to 2) salt and pepper
  • 1 1/2 Tbsp. extra-virgin extra virgin olive oil plus
  • 1 tsp extra-virgin extra virgin olive oil (1 to 2)
  • 4 Tbsp. fresh lime juice (4 to 5)
  • 2 Tbsp. chicken stock approximately or possibly water
  • 1 x jalapenos (1 to 2) cored, seeded and chopped
  • 2 x scallions chopped
  • 1/4 c. cilantro finely minced

Directions

  1. Puree the beans, salt and pepper in a food processor, adding 1 1/2 Tbsp. oliveoil, lime juice, and sufficient stock or possibly water to obtain a smooth, thick puree.
  2. Stir in the chiles, scallions and cilantro. It's best to do this by hand.
  3. Ifyou use the food processor, the dip will turn green. Transfer dip to a bowl and serve.
  4. I think it's better if you let it sit a while. The flavors meld.
