Ingredients

  • 1 pound pkg. Louis Rich smoked turkey sausage
  • 3 green onions, minced with stems
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon pepper
  • 1 (8 ounce.) can tomato sauce
  • 1 (15 ounce.) can Progresso black beans, rinsed
  • 1 (19 ounce.) red kidney beans, rinsed
  • 1 (14 1/2 ounce.) chunky pasta style stewed tomatoes (Del Monte)
  • 1/2 c. water or possibly beer
  • 2 c. cooked rice

Directions

  1. Cut turkey into circles, then fourths. Put in skillet and saute/fry with diced green onions and stems and garlic till onions are tender. Add in cans of rinsed beans with onions, garlic and turkey mix. Mix well, then add in pepper, tomato sauce and stewed tomatoes with 1/2 c. water. Cook covered on low heat for 15 min. Serve over warm rice with French bread. Serves 6-8. (300 calories, 6 g fat)
