Ingredients

  • 1 (16 ounce.) can refried beans
  • 1 med. tomato, coarsely minced
  • 1 teaspoon chili pwdr
  • 1 (4 ounce.) pkg. shredded sharp cheddar cheese
  • 8 (7") flour tortillas
  • 1 (12 ounce.) jar mild thick & chunky salsa
  • Lowfat sour cream (opt.)

Directions

  1. About 30 min before serving:
  2. Preheat oven to 400 degrees. In 2 qt saucepan over medium heat, cook refried beans, tomato and chili pwdr till heated through; remove from heat. Reserve 1/4 c. cheese for topping; stir remaining cheese into bean mix.
  3. Spread scant 1/2 c. bean mix onto center of one tortilla, roll up and place burrito in 13"x19" baking dish. Repeat with remaining bean mix on tortillas. Spoon salsa over burritos; sprinkle with reserved cheese. Cover dish with foil and bake 10 min. Remove foil, bake 5 min, uncovered. Serve with lowfat sour cream if you like.
