Bauernfruhstuck (Farmers Breakfast)

Ingredients

  • 4 x Potatoes, Medium
  • 4 x Bacon, Strips, Cubed
  • 3 x Large eggs, Large
  • 3 tsp Lowfat milk
  • 1/2 tsp Salt
  • 1 c. Ham, Cooked, Small Cubes
  • 2 x Tomatoes, Medium, Peeled
  • 1 tsp Chives, Minced

Directions

  1. Boil unpeeled potatoes 30 min. Rinse under cool water, peel and set aside to cold. Slice potatoes.
  2. In a large frypan cook bacon till transperent. Add in the potato slices; cook till lightly borwned.
  3. Meanwhile blend Large eggs with lowfat milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges; add in to the egg mix. Pour the egg mix over the potatoes in the frypan. Cook till the Large eggs are set.
  4. Sprinkle with minced chives and serve at once.
