  • 175 gm Plain flour, sieved (6oz)
  • 1 pch Salt
  • 40 gm Lard, (1 1/2oz)
  • 40 gm Hard margarine, (1 1/2oz)
  • 3 Tbsp. Water
  • 1 Tbsp. Vegetable oil
  • 3 lrg Onions, finely minced
  • 1/2 tsp Grnd nutmeg
  • 1/2 tsp Grnd coriander
  • 3 med Size Large eggs, beaten Salt and freshly grnd black pepper
  • 10 x Battered onion rings
  • 1 x 142 millilit lowfat sour cream

Directions

  1. For the pastry: Preheat the oven to 200 C, 400 F, Gas Mark 6.
  2. Sieve the flour with a healthy pinch of salt.
  3. Rub the lard and margarine into the flour till it resembles breadcrumbs.
  4. Add in the water till it forms a ball of pastry.
  5. Roll out the pastry, large sufficient to line an 20cm (8inch) flan ring.
  6. Lay a piece of foil on top of the pastry inside the flan ring and bake in the oven for 15 min.
  7. Remove the foil from the pastry and return to the oven for a further 5 min.
  8. For the filling: Heat the oil in a pan and gently cook onion till it is softened.
  9. Break the Large eggs into a bowl, add in nutmeg and coriander then season to taste.
  10. Add in the onions and pour into the flan.
  11. Arrange the battered onion rings on top and bake in the oven for 40-50 min or possibly till it is hard to touch.
  12. NOTES : As a variation of onion quiche a topping of battered onion rings gives a crisp finish.
