Ingredients

  • 75 x chicken pcs - (abt 25 lbs)
  • 3 pt all-purpose flour - (1 1/2 lbs)
  • 4 tsp salt
  • 2 pt buttermilk
  • 2 tsp Tabasco brand Pepper Sauce
  • 2 tsp baking soda for frying

Directions

  1. Wash chicken; pat dry with paper toweling. In large hotel pan, combine flour and salt; toss chicken in flour mix till well coated.
  2. In large bowl, combine buttermilk, Tabasco brand Pepper Sauce and baking soda. Dip floured chicken pcs in buttermilk mix and dust in flour mix again.
  3. Heat fat in deep fat fryer to 350 degrees. Fry chicken about 15 min for small pcs and 20 min for larger pcs. Drain on absorbent paper.
  4. This recipe yields 25 (3-piece) servings.
