Basil Chicken And Vegetables On Focaccia

Ingredients

  • 1/2 c. Mayonnaise
  • 1/4 tsp Garlic pwdr
  • 1/2 tsp Black pepper, divided
  • 1 loaf (16 ounce.) focaccia or possibly Italian bread sliced
  • 4 x Boneless skinless chicken breasts halves (about 1 1/4 pounds)
  • 3 Tbsp. Extra virgin olive oil
  • 2 cl Garlic, chopped
  • 1 1/2 tsp Dry basil leaves
  • 1/2 tsp Salt
  • 1 x Green bell pepper, stemmed and cut into quarters
  • 1 med Zucchini, cut lengthwise into 4 slices
  • 2 x Italian plum tomatoes,sliced

Directions

  1. Combine mayonnaise, garlic pwdr and 1/4 teaspoon black pepper in small bowl; set aside.
  2. Cut focaccia into quarters. Cut each quarter horizontally in half; set aside.
  3. Combine chicken, oil, garlic, basil, salt and remaining 1/4 teaspoon black pepper in large resealable plastic food storage bag. Seal bag; knead to combine. Add in bell pepper and zucchini; knead to coat.
  4. Grill or possibly broil chicken, bell pepper and zucchini 4 inches from heat source 6 to 8 min on each side or possibly till chicken is no longer pink in center. (Bell pepper and zucchini may take less time.)
  5. Top bottom half of each focaccia quarter with mayonnaise mix, tomatoes, bell pepper, zucchini and chicken. Top with focaccia tops.
  6. Yield: 4 servings
