Ingredients

  • 3 1/2 c. flour
  • 1 c.sugar
  • 5 teaspoon baking pwdr
  • 1 1/2 teaspoon salt
  • 2 beaten Large eggs
  • 1 1/2 c. lowfat milk
  • 1/2 c. shortening

Directions

  1. Stir together flour, sugar, baking pwdr, and salt; make a well in center. Combine Large eggs, lowfat milk, and shortening, and add in all at once to dry ingredients, stirring just till moistened. Fill greased or possibly paper-lined muffin tins two-thirds full. Bake at 375 degrees for 25-30 min. Makes 9-12 Texas muffins or possibly 18-24 muffins.
  2. VARIATIONS:
  3. Blueberry: Two c. blueberries and one tsp. cinnamon.
  4. Oatmeal Blueberry: Two c. blueberries, one tsp. cinnamon, two c. oatmeal, and another quarter-c. of lowfat milk.
  5. Cranberry: One 16 oz can whole cranberry sauce, one tsp. cinnamon, and one-half tsp. allspice.
  6. Banana Nut: Two or possibly three mashed bananas, one-half c. minced nuts, and one tsp. cinnamon.
  7. Apple Cinnamon: One c. finely minced apple, and one tsp. cinnamon.
  8. Pineapple: One 16 oz can pineapple chunks, liquid removed, and one tsp. nutmeg.
  9. Coconut Chip: One c. coconut and one tsp. cinnamon. Top with chocolate chips before baking.
  10. Cherry: One and one-half c. coarsely, minced cherries. One-half tsp. grnd cloves, and one tsp. cinnamon.
  11. Peach: One 16 oz can diced peaches, liquid removed and one tsp. nutmeg.
  12. Raspberry or possibly Strawberry: Add in one and one-half c. sliced frzn strawberries or possibly raspberries and one tsp. cinnamon.
