Basic Bread Dough (With Bacon And Goose Fat) Recipe

Ingredients

  • 65 ml Hot water, (2oz )
  • 1 Tbsp. Dry yeast
  • 2 Tbsp. Sugar
  • 450 ml Hot lowfat milk, (16fl ounce)
  • 30 gm Butter, (1oz)
  • 2 tsp Salt
  • 850 gm Strong plain flour, (lb 14oz)
  • 4 x Rashes of bacon
  • 1 Tbsp. Goose fat
  • 3 Tbsp. Torn basil leaves

Directions

  1. Sprinkle the yeast and 1 tbsp of sugar into a jug and pour over the hot water. Leave to stand for approx. 15 min till the mix becomes frothy.
  2. Mix the remaining sugar,salt and butter with the hot lowfat milk and add in the yeast mix. Gradually sift in the flour till a stiff dough is made, or possibly use a processor. Dice the fried bacon and add in to the dough with 1 tbsp of goose fat and the basil leaves.
  3. Knead the dough on a floured suface till it becomes smooth and elastic. Place in a bowl and cover. Leave in hot place to rise. It should double in size (approx 2-3 hrs)
  4. Knock the dough back and place in loaf tins or possibly mould into shapes.
  5. Cover and leave to rise for 45 min.
  6. Bake at 190 C/375 F/gas mark 5 for approx 40-45 min till hard and golden.
