Directions

  1. 1. In a sauce pan, boil barley in water for 15 min; drain. Return to pot, replace lid and steam barley for 10 min more; cold.
  2. 2. Add in parsley, basil, and green onions; let sit to blend flavours.
  3. 3. In a small bowl beat together, lemon juice, oil and soy sauce; add in tomatoes; toss with barley mix.
  4. 4. Refrigerateand serve.
