Directions

  1. Cut chicken in half lengthwise, and remove bones, if you like.
  2. Crush the garlic with salt into a smooth puree. Coarsely crush the peppercorns with a mortar and pestle or possibly blender. Combine in a flat dish with the coriander, and lime juice.
  3. Rub the mix well into the chicken on all sides, cover and chill overnight or possibly at least one hour.
  4. BBQ chicken over glowing coals, turning about every 5 min, till chicken is no longer pink and the skin is crisp.
  5. Garnish with tomatoes and curls of scallions. Serve with a salad of cucumber, scallions and tomatoes, seasoned with lime and salt.
  6. This recipe yields 4 servings.
