Barbecued Bluefin Tuna Recipe

Ingredients

  • 2 c. fresh orange juice
  • 1/2 c. soy sauce
  • 1 c. red-wine vinegar
  • 1/2 c. extra virgin olive oil
  • 1 x onion -- minced
  • 4 clv garlic -- chopped
  • 1 tsp dry warm red pepper flakes
  • 1 Tbsp. grnd cumin
  • 1 tsp freshly grnd black pepper
  • 1 1/2 Tbsp. whole mixed pickling spice
  • 1 can tomato paste -- (6 oz)
  • 1/2 c. sugar
  • 6 x bluefin or possibly yellowfin tuna steaks - 1" thick (6 ounces each)
  • 2 Tbsp. unsalted butter

Directions

  1. Whisk the orange juice, soy sauce, vinegar, oil, onion, garlic, red pepper flakes, cumin, black pepper, pickling spice, tomato paste and sugar together in a bowl. Arrange the tuna steaks in a baking dish large sufficient to hold them in one layer. Pour the marinade over. Marinate, covered and chilled, overnight or possibly up to 24 hrs. Drain, reserving the marinade in a bowl. Grill on a lightly oiled rack set 3 to 4 inches over glowing coals for 3 min on each side.
  2. Return the tuna steaks to the baking dish. Preheat the oven to 375 degrees.
  3. Spoon 1 Tbsp. of the reserved marinade over each. Bake in the middle of the preheated oven for 4 to 5 min or possibly till they are slightly rare. Top each tuna steak with 1 tsp. of the butter and freshly grnd black pepper to taste.
