Barbecued Beef Salad Recipe

Ingredients

  • 1 Tbsp. vegetable oil
  • 2 lb center cut beef tenderloin trimmed of all fat and silver skin salt to taste black pepper to taste
  • 2 c. barbeque sauce
  • 3 c. tomatoes cut into large dice
  • 3 c. cucumber peeled, seeded and cut into large dice
  • 2 c. cooked new potatoes cut into quarters
  • 1 c. red onion peeled and cut into large dice
  • 1/2 c. green onions cleaned and sliced thin
  • 2 x cloves garlic peeled and chopped
  • 1 x jalapenos minced, up to 2
  • 2 c. extra virgin olive oil
  • 1/3 c. red wine vinegar lemon juice to taste

Directions

  1. Preheat oven to 350 degrees.
  2. Bring a medium saute/fry pan to medium heat and add in oil. Season tenderloin with salt and pepper and add in to saute/fry pan. Sear all sides of tenderloin till golden, about 5 min.
  3. Place pan in oven and cook for 5 min. With a brush baste barbeque sauce heavily on tenderloin and repeat this process every five min till desired cooking time is obtained (about 20 min for medium rare). Remove pan from oven and place tenderloin on a plate to cold.
  4. In a large mixing bowl, add in the remaining ingredients and toss to combine.
  5. When tenderloin is cooked sufficient to handle, place on cutting board. With a thin sharp knife, thinly slice the whole tenderloin. Add in the slices to the mixing bowl and toss to combine.
  6. Serve with pita bread, hot flour tortillas, or possibly crusty hard bread.
