Barbecued Alligator Tail Recipe

  • 4 x Alligator tail steaks - (abt 3/4" thick) Lowfat milk for marinade
  • 1/2 tsp Freshly-grnd black pepper
  • 1/4 tsp Cayenne pepper
  • 1 Tbsp. Rosemary Red pepper flakes Salt to taste Extra virgin olive oil for brushing

Directions

  1. Place lowfat milk in a deep bowl, add in pepper flakes and rosemary. Season meat with black and cayenne peppers. Place meat in the bowl, add in lowfat milk as needed to cover. Let marinate 3 to 4 hrs.
  2. Remove meat from marinade, discarding marinade. Pat the meat dry. Re-season the meat, if you like, with black and red peppers. Add in salt to taste, if you like.
  3. Brush meat with extra virgin olive oil to reduce sticking, and grill over warm coals, or possibly over medium heat in a gas grill for about 10 min each side, brushing with oil again when turning.
  4. This recipe yields 4 servings.
