Bananas Baked In Lemon Sauce Recipe

Ingredients

  • 1 x egg
  • 110 gm sugar
  • 1 1/2 x level tsp. cornflour sieved Grated zest and juice of 2 lemons
  • 1 x tabkspoon sherry (optional)
  • 6 med bananas
  • 25 gm butter Freshly grated nutmeg

Directions

  1. Preheat oven to gas mark 4 350 degrees F (180 degrees C). You will need a 1.5litre shallow ovenproof dish.
  2. Begin by whisking the egg and sugar together in a large bowl till the mix becomes pale and thickened.
  3. Then mix in the sieved cornflour the zest and juice of the lemons and the sherry folding to mix everything well.
  4. After which peel the bananas and cut them into 2.5cm thick diagonal slices.
  5. Heat the butter in a fryingpan and when it begins to heat and foam add in the banana slices.
  6. Turn them over gently in the butter and cook them for a few min till they begin to change colour.
  7. Then spoon them into the baking dish cover completely with the lemon sauce and add in a generous grating of fresh nutmeg.
  8. All this can be done ahead of time.
  9. When you are ready to serve pop them into a pre heated oven bake for 20 min and serve warm.
  10. Can all be prepared well in advance and just needs popping into the oven 20 min before you need it.
