Ingredients

  • 1/3 c. Vegetable shortening
  • 1 1/4 c. Sugar
  • 2 x Egg
  • 1 tsp Vanilla
  • 3 med Banana, mashed
  • 2 c. Flour
  • 1 1/4 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 c. (8 ounce) Cultured Lowfat sour cream
  • 3/4 c. Walnuts, minced

Directions

  1. In mixing bowl, cream shortning and sugar. Add in the Large eggs, one at a time, beating well after each addition. Blend in vanilla. Add in bananas and mix well. Combine flour, baking pwdr, soda, and salt; add in to the creamed mix alternately with lowfat sour cream, stirring till just combined. Stir in walnuts. Pour into a greased and floured bundt pan. Bake at 350 for 50 min, or possibly till tests done. Cold 10 min and invert onto platter. Cold completely and dust with powdered sugar or possibly drizzle with icing.
