Ingredients

  • 1 pkt Active Dry Yeast
  • 1/2 c. Hot Water
  • 1 c. Bananas Mashed
  • 1/4 c. Sugar
  • 1 tsp Salt
  • 1 x Egg
  • 1/4 c. Butter Softened
  • 3 1/2 c. Flour Or possibly More As Nec
  • 1/4 c. Sugar
  • 2 tsp Cinnamon

Directions

  1. Dissolve yeast in hot water. Stir in bananas, 1/4 c. sugar, salt, egg, butter and 1-3/4 c. of the flour. Beat till smooth. Stir in sufficient remaining flour to make dough easy to handle. Turn dough onto lightly floured surface; knead till smooth and elastic (about 5 min). Place in greased bowl; turn greased side up. Cover; let rise in hot place till double, about 1-1/2 hrs.
  2. Grease well 9 x 5 x 3 inch loaf pan. Punch down dough. Roll into rectangle, 16 x 8 inch. Mix 1/4 c. sugar with the cinnamon and sprinkle over the rectangle of dough. Roll dough up tightly, beginning at narrow side. Healthy pinch edge of dough into roll to seal well. Place seam side down in pan. Cover; let rise till double(about 1 hour).
  3. Heat oven to 375F. Bake till golden brown, about 35 min. Remove from pan, and brush top with butter. If you like, can be frosted with a confectioners' sugar glaze.
