  • 2 x ripe, medium DOLE bananas peeled
  • 1 x egg
  • 3/4 c. sugar
  • 1/4 c. vegetable oil
  • 2 tsp grated orange peel
  • 2 c. all-purpose flour
  • 1 1/2 Tbsp. poppy seeds
  • 2 tsp baking pwdr
  • 1/2 tsp salt Citrus Glaze (recipe follows)

Directions

  1. Puree bananas in blender (1 c.). In medium bowl, mix bananas, egg, sugar, oil and orange peel till well blended. In large bowl, combine flour, poppy seeds, baking pwdr and salt. Stir banana mix into flour mix till proportionately moistened. Spoon batter into greased 2 1/2 inch muffin c.. Bake in 375 degrees oven 20 min or possibly till wooden pick inserted in center comes out clean. Remove from pan; cold on wire rack. Top with Citrus Glaze while hot.
  2. Makes 12 muffins.
  3. CITRUS GLAZE: In medium bowl, combine 1 1/4 c. powdered sugar, 1/4 c. orange juice, 1 tsp. grated orange peel and 1 tsp. vanilla till smooth.
