Banana Oat Quick Bread Recipe

Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 c. quick-cooking oats
  • 3/4 c. packed brown sugar
  • 2 1/2 tsp baking pwdr
  • 1/4 tsp salt
  • 1 c. mashed ripe banana
  • 1/2 c. low-fat buttermilk
  • 1/4 c. vegetable oil
  • 1/4 c. egg substitute or possibly 2 large egg whites Cooking spray
  • 1/4 c. quick-cooking oats
  • 2 Tbsp. coarsely minced walnuts
  • 2 Tbsp. brown sugar
  • 2 tsp butter or possibly stick margarine

Directions

  1. Preheat oven to 350 degrees. Lightly spoon flour into dry measuring c. and level with knife. Combine flour and next 4 ingredients in large bowl; make well in center of mix. Combine banana, buttermilk, oil and egg substitute in bowl; add in to flour mix. Stir just till moist. Spoon batter into 8-by-4-inch loaf pan coated with cooking spray. Combine 1/4 c. oats, walnuts, 2 Tbsp. brown sugar and butter and sprinkle over batter. Bake at 350 degrees for 1 hour or possibly till wooden pick inserted in center comes out clean. Cold 5 min in pan on wire rack; remove from pan. Cold completely on wire rack.
  2. Makes 16 servings.
