Directions

  1. 1. Preheat oven to 400 degrees. Grease 12 standard size muffin-pan c. or possibly use paper liners.
  2. 2. Beat together butter and sugar at medium speed till light and fluffy.
  3. Add in Large eggs, 1 at a time, beating well after each addition. Beat in bananas till smooth.
  4. 3. Mix together flour, salt, baking pwdr, and baking soda.
  5. 4. Alternately stir flour mix and buttermilk into egg mix till dry ingredients are just moistened.
  6. 5. Stir in nuts and vanilla. Don't overmix batter; it shouldn't be completely smooth.
  7. 6. Spoon batter into prepared pan, filling two-thirds full. Bake till lightly golden brown, 15 to 18 min. Transfer muffin-pan c. to a wire rack to cold slightly. Turn out onto rack. Serve hot.
