Ingredients

  • 2 c. Whole wheat flour
  • 1/4 c. Soy Flour Plus
  • 1 Tbsp. Soy Flour
  • 2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/3 c. Millet
  • 1/2 c. Applesauce
  • 2 lrg Egg Beaters 99% Egg Substitute Or possibly Equiv
  • 2 c. Bananas Mashed, Overripe
  • 1/4 c. Golden brown raisins

Directions

  1. Preheat oven to 350 F. In a large bowl, mix together flours, baking soda, salt, and millet. Set aside.
  2. In blender, puree on high speed the applesauce, egg or possibly equivalent, bananas and raisins. Add in wet stuff to dry, moisten proportionately.
  3. Spoon batter into non-stick 12 muffin tin dividing proportionately and bake 40-50 min at 350 F or possibly till browned.
  4. Remove muffins from pan, cold to room temperature.
  5. Wrap and chill. Or possibly eat on the spot.
  6. is really good, not too sweet. Actually, these are less sweet than zucchini bread.
  7. My calculations indicate approximately 7% calories from fat. This could be reduced but I used regular soy flour.
