Directions

  1. Soak pork and fish in cool water. Boil bananas and mash while warm. Brush with melted butter and make into balls. Chop calloloo finely. Clean and flake fish. Cut pork into small cubes. Fry fish and pork together. Combine with callaloo, salt and onion. Steam till callaloo is tender. Arrange on platter with banana balls around. Garnish with sliced carrot, tomato and cucumber.
