Banana Glazed Butterflied Pork Tenderloin

Banana glaze ingredients.
Use 1 large ripe banana.
Sorry for the blur. Mash the banana thoroughly.
Add Ghee to medium hot pan and saute until translucent. Add garlic and saute until fragrant.
Add all remaining glaze ingredients and simmer on low heat for 10 minutes. Stir frequently.
Use an immersion blender to liquify the glaze. It should be thick but still pourable.
Rub and pork ingredients. Trim the tenderloin of all fat and sinew. You should end up with about 1 lb of timmed pork.
Butterfly the pork and seperate into 4 pieces.
Coat both sides with rub and regrigerate for at least 1 hour
Grill the pork for about 10 minutes total. Coat with glaze on both sides during the last few minutes of grilling. Top with additional glaze and serve.
