,%20I%20was%20definitely%20in%20the%20mood%20for%20pie.%20But%20which%20pie?%20Being%20a%20bit%20lazy%20lately,%20I%20wanted%20to%20make%20something%20simple.%20I%20decided%20to%20pull%20out%20my%20old%20and%20very%20used%20book%20of%20pies%20and%20cakes%20(same%20recipe%20book%20as%20the%20cheesecake%20recipe)%20and%20flipped%20through%20to%20see%20what%20would%20be%20yummy%20yet%20simple.%3C/p%3E%3Cp%3EI%20finally%20settled%20on%20the%20banana%20cream%20pie%20recipe%20since%20I%20know%20it%E2%80%99s%20one%20of%20the%20Mister%E2%80%99s%20favorite%20pies.%20Since%20there%20was%20lots%20going%20on%20that%20day%20(had%20in-laws%20coming%20over%20for%20dinner),%20I%20decided%20to%20go%20with%20store-bought%20pie%20crust%20to%20save%20some%20time.%20I%20made%20a%20couple%20of%20changes%20since%20I%20really%20wanted%20to%20boost%20the%20vanilla%20flavor%20since%20I%20find%20that%20sometimes%20all%20I%20can%20taste%20are%20bananas%20and%20the%20vanilla%20cream%20becomes%20invisible.%20So%20I%20used%20vanilla%20sugar%20as%20well%20as%20adding%20the%20seeds%20from%20a%20vanilla%20bean.%20Both%20these%20additions%20added%20the%20extra%20vanilla%20flavor%20I%20was%20hoping%20for.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20pie%20crust%20for%20a%209%E2%80%B3%20pie%20pan%3C/p%3E%3Cp%3ELine%20a%209%E2%80%B3%20pie%20pan%20with%20crust.%20Finish%20the%20edges%20as%20desired.%20Bake%20pie%20shell%20as%20directed%20by%20recipe%20or%20package.%20Cool%20on%20rack%20until%20needed.%3C/p%3E%3Cp%3EIn%20a%20saucepan,%20mix%20sugar,%20cornstarch%20and%20salt.%20Blend%20the%20milk%20and%20egg%20yolks.%20I%20used%20a%20whisk%20to%20incorporate%20the%20two%20ingredients.%20Stir%20egg%20mixture%20slowly%20into%20the%20dry%20ingredients,%20making%20sure%20to%20combine%20everything%20together.%20If%20using%20vanilla%20bean,%20add%20the%20scrapings%20now.%3C/p%3E%3Cp%3EJust%20a%20quick%20note%20before%20the%20next%20step.%20The%20cooking%20of%20the%20cream%20is%20not%20a%20part%20where%20you%20want%20to%20walk%20off.%20It%20needs%20to%20be%20constantly%20stirred%20while%20cooking.%20So%20make%20sure%20you%20can%20stay%20with%20the%20pot%20until%20done.%3C/p%3E%3Cp%3ECook%20over%20medium%20heat,%20stirring%20constantly,%20until%20mixture%20thickens%20and%20begins%20to%20boil.%20Make%20sure%20to%20scrape%20the%20bottom%20and%20sides%20of%20the%20saucepan%20to%20avoid%20any%20browning%20or%20burning%20of%20the%20cream.%20I%20didn%E2%80%99t%20time%20this%20but%20it%20did%20take%20a%20bit%20of%20time%20until%20it%20started%20to%20thicken.%20Don%E2%80%99t%20be%20alarmed%20if%20you%20start%20to%20see%20clumps%20of%20thickening%20cream%20on%20the%20spoon/spatula.%20Keep%20stirring%20and%20the%20rest%20of%20the%20cream%20will%20thicken%20up%20shortly%20after.%20Once%20the%20cream%20thickens%20and%20starts%20to%20boil,%20continue%20to%20cook%20for%20another%20minute,%20always%20stirring!%20Remove%20from%20heat%20and%20blend%20in%20the%20butter%20and%20vanilla%20extract.%20Press%20plastic%20wrap%20onto%20filling%20in%20saucepan%20and%20cool%20to%20room%20temperature.%20The%20plastic%20wrap%20will%20prevent%20a%20(yucky)%20crust%20from%20developing%20on%20the%20top%20of%20the%20cream.%3C/p%3E%3Cp%3EI%20sliced%202%20bananas%20and%20layered%20that%20on%20the%20bottom%20of%20the%20pie%20crust.%20Since%20my%20bananas%20weren%E2%80%99t%20completely%20yellow%20and%20still%20had%20a%20slight%20%E2%80%9Cgreen%E2%80%9D%20taste%20to%20them,%20I%20decided%20to%20add%20the%20cooked%20cream%20before%20it%20completely%20cooled%20down.%20The%20saucepan%20was%20still%20warm%20to%20the%20touch.%20I%20wanted%20to%20do%20this%20to%20help%20soften%20up%20the%20banana%20just%20a%20wee%20bit.%3C/p%3E%3Cp%3EChill%20pie%20for%20at%20least%202%20hours.%20I%20took%20out%20the%20pie%20about%20an%20hour%20before%20serving%20to%20pipe%20on%20the%20sweetened%20whip%20cream.%20I%20used%20a%20pastry%20bag%20with%20a%20large%20flower%20tip%20to%20make%20it%20a%20bit%20decorative.%20Of%20course%20the%20whipped%20cream%20could%20be%20served%20on%20the%20side%20or%20a%20nice%20huge%20dollop%20on%20top%20of%20a%20wedge.%3C/p%3E%3Cp%3EBut%20funny%20after%20piping%20the%20whipped%20cream%20all,%20I%20forgot%20to%20take%20a%20picture%20of%20the%20completed%20pie%20before%20it%20was%20sliced%20into.%20But%20here%E2%80%99s%20a%20shot%20of%20what%20was%20left.%3C/p%3E%3Cp%3EIt%20was%20great%20for%20breakfast%20the%20next%20morning%20with%20coffee.%20You%20can%20just%20make%20out%20the%20bananas%20at%20the%20bottom.%3C/p%3E%3Cp%3EI%20really%20enjoyed%20the%20way%20this%20turned%20out%20and%20how%20I%20could%20still%20tasted%20the%20vanilla%20along%20with%20the%20bananas.%20This%20pie%20really%20isn%E2%80%99t%20hard%20to%20make,%20especially%20with%20store%20bought%20pie%20crust.%20Just%20have%20to%20remember%20to%20use%20medium%20heat%20and%20keep%20stirring.%3C/p%3E%3Cp%3EHope%20everyone%20is%20having%20a%20great%20weekend!%3C/p%3E){kind=link}
