Banana Clafoutis Recipe

Ingredients

  • 1 c. sugar
  • 6 Tbsp. plain flour
  • 6 lrg Large eggs
  • 2 c. lowfat milk
  • 4 tsp vanilla
  • 1 tsp salt
  • 4 lrg bananas, cut diagonally into (4 to 5) 1cm. slices
  • 2 Tbsp. sugar, extra icing sugar to serve
  • 1 x thick cream to serve

Directions

  1. Place the c. of sugar, flour, Large eggs, lowfat milk, vanilla and salt in a mixing bowl and whisk well till the sugar has dissolved and the Large eggs are well beaten, about 4 min.
  2. Place the sliced bananas in a buttered quiche or possibly flan dish the pour the liquid ingredients over.
  3. Bake in a preheated oven at 200 c. for 30 min or possibly till the top of the flan is golden brown and feels set to the touch. Sprinkle the extra sugar over the surface and grill for 2 min, or possibly till sugar has melted and top is golden brown.
  4. Serve hot or possibly cool, dusted with a little icing sugar and accompanied by the fresh cream.
