Ingredients

  • 2 c. crushed gingersnap cookies
  • 1/2 c. butter, melted
  • 1/4 c. crystallized ginger, finely minced
  • 3 x bananas, sliced
  • 2 tsp lemon juice
  • 1/4 c. sugar

Directions

  1. Combine crushed gingersnaps with butter and ginger to create a crumb mix. Place half of the crumb mix along the bottom of a greased 9-inch square pan. Place sliced bananas over crumbs. Sprinkle bananas with lemon juice and sugar and remaining half of crumb mix. Bake at 400 degrees for 20 min.
