Ingredients
- 12 oz margarine or butter
- 25 oz sugar
- 9 oz liquid eggs
- 1/4 cup vanilla extract
- 32 oz mashed over-ripe bananas
- 2 lbs flour
- 4 Tbsp baking powder
- 2 tsp salt
- 1/2 tsp baking soda
- 8 oz chopped nuts
- 1 cup milk
Directions
- Cream sugar and margarine on medium speed with a paddle for 5 minutes.
- Scrape down the paddle and bowl.
- Add eggs and mix on high for 2 more minutes
- Scrape the paddle and bowl.
- Add the bananas and beat 1-2 minutes.
- Meanwhile, have all dry ingredients mixed together, including chopped nuts.
- Alternately add the dry mix and milk, mixing on medium and scraping down the bowl to ensure everything gets well mixed.
- Once everything is in, mix for one more minute.
- In pans that have been greased, divide batter evenly.
- Bake in a 325 degree convection oven (or 350 conventional oven) for about 50-55 minutes.
- Test by inserting a toothpick into center- pick should be clean when removed.
- Note: Top of the loaf, when batter is wet, can be garnished with sesame seeds, crushed nuts, or sprinkled lightly with sugar.
