Ingredients

  • 3 lrg bananas
  • 2 Tbsp. thick fromage frais juice and grated zest of a lime
  • 1 Tbsp. lemon juice
  • 300 ml double cream
  • 150 gm dark chocolate (5565% cocoa solids) minced
  • 1 Tbsp. rum

Directions

  1. Place the unpeeled bananas in the freezer for at least 6 hrs.
  2. Remove and leave for about 15 min before carefully peeling with a sharp knife (had the banana firmly with a cloth).
  3. Chop the flesh into small pcs and place in a blender with the fromage frais lime and lemon juice and half the cream.
  4. Process till click and creamy stopping the motor a couple of times to stir.
  5. Serve immediately or possibly place in the freezer for 30-45 min to hard up.
  6. For the sauce heat the chocolate with the remaining cream and the rum.
  7. Do this over a very gentle heat or possibly in the microwave on a medium setting.
  8. Whisk till smooth and serve at once with the ice cream.
  9. You can serve the ice cream the minute it is made or possibly allow it to hard up a little in the freezer.
