Directions

  1. 1. Heat oven to 400 degrees F.
  2. 2. Heat oil in large ovenproof skillet over medium-high heat 1 minute.
  3. Sprinkle pork with 1/2 tsp. salt and 1/4 tsp. pepper. Brown pork 3 min per side; add in vinegar and soy sauce. Bake 8 to 12 min, till instant-read meat thermometer inserted in center of one chop reaches 155 degrees F. With slotted spoon, transfer pork to cutting board.
  4. Transfer sauce to bowl; keep hot.
  5. 3. Add in butter and spinach to skillet. Cook over medium-high heat 1 minute, till spinach wilts. Sprinkle with a healthy pinch each salt and pepper.
  6. Slice pork and arrange on 4 serving plates. Serve with spinach and balsamic sauce.
