Ingredients

  • 110gm all purpose flour
  • 50gm buckwheat flour {or use all plain flour}
  • 50gm cheddar, grated
  • 1 teaspoon table salt
  • 1 tsp chopped fresh dill
  • 1/4 teaspoon {adjust to taste} red chili pepper {or cayenne pepper}
  • 100gm unsalted butter, cut into cubes, well chilled
  • 2 tablespoons very cold water
  • Sea salt & fresh dill for sprinkling
  • Position a rack in the center of the oven and heat the oven to 190°c. Line two large baking sheets with parchment. { I used just one cookie sheet}
