Ingredients

  • Slow Roasted Tomatoes
  • About a dozen large, ripe tomatoes
  • 2 Tbsp good olive oil
  • 2 Tbsp dried oregano
  • 3-4 cloves of garlic, finely chopped
  • 2-3 tbsp sea salt
  • Enough good quality extra virgin olive oil to cover cooked tomatoes when placed in a jar {I used Borges from here}
