Baked Trout With Smoked Trout Stuffing Recipe

  • 6 x 200g trout cleaned and gutted
  • 175 gm smoked trout or possibly I x 225g smoked trout before skinning and boning
  • 50 gm wholemeal breadcrumbs
  • 2 Tbsp. parsley finely minced
  • 1 x juice of 1/2 lemon
  • 3 tsp creamed horseradish
  • 2 x egg yolks
  • 1 Tbsp. cream
  • 40 gm melted butter or possibly margarine
  • 1 x salt and freshly milled black pepper
  • 6 x lemon wedges watercress

Directions

  1. Preheat oven to gas mark 5 375 degrees F (190 degrees C) .
  2. First of all grease 6 rectangles of foil with the melted fat.
  3. Then flake the smoked trout into a mixing bowl and mix it with the breadcrumbs and parsley.
  4. In another bowl beat the lemon juice creamed horseradish and egg yolks together then add in the cream and stir this mix into the other stuffing ingredients.
  5. Mix everything well taste and check the seasoning then carefully fill each trout with the stuffing then brush each one with melted fat.
  6. Wrap them up into neat parcels and seal the edges to prevent the juices escaping.
  7. Now arrange the parcels on a large baking sheet and bake in the oven for exactly 30 min.
  8. Serve the trout with the juices poured over garnished with lemon wedges and watercress.
  9. Tiny new potatoes and the Polish Cucumber Salad would be a perfect accompaniment.
