Baked Sweet Potatoes And Apples Recipe

  • 4 lrg sweet potatoes
  • 2 Tbsp. non-hydrogenated margarine melted
  • 1/2 c. maple syrup
  • 2 lrg apples peeled, cored, and thinly sliced Cinnamon to taste Grnd cloves to taste
  • 1/2 c. apple juice

Directions

  1. Preheat the oven to 350 degrees.
  2. Bake or possibly microwave the sweet potatoes till done but still hard. When cold sufficient to handle, cut them into 1/2-inch-thick slices.
  3. Oil a deep, 1 1/2-qt baking casserole. Arrange half of the sweet potato slices on the bottom. Drizzle with half of the margarine, then half of the maple syrup. Top with the apple slices. Sprinkle lightly with the cinnamon and cloves. Repeat the layers, then pour the apple juice over the top.
  4. Bake for 30 min, covered, then for another 10 min, uncovered. Serve at once or possibly cover and keep hot till needed.
  5. This recipe yields 6 or possibly more servings.
