Baked Pomegranate Oatmeal... Recipe

Are all oatmeals created equal? I'll tell you, as I come from a long line of oatmeal-eating-people, I'm overly qualified to answer that question...and the answer is NO! Most packaged oatmeal falls into two categories, those with no flavor and those that are over-flavored and sugary, so I usually make my own oatmeal and skip the packaged stuff. Well guess what? I was just introduced to Better Oats Oatmeal and their name says it all...they are better! Is it because Better Oats uses whole grain oats with organic grains and seeds, like flax, barley and quinoa, you ask? Or is it because Better Oats comes in 23 amazing flavors, like Pomegranate, that are rich in antioxidants and Omega-3? Yes and yes! And you know me, I'm all about eating healthy....hahahaha, just a little Christmas humor! Actually, I do try to start my day off right, and this Baked Pomegranate Oatmeal is not only healthy, but it's delicious and filling...I'm quite certain I won't be reaching for any fudge until at least noon!

Each box of Better Oats Oatmeal has five individual packages inside, for this recipe I used them all. The great thing about this recipe is no other spices, extracts or sugars are needed, all the flavor is already in there along with those healthy oats and fiber!

Just look at how festive this is! It was the perfect way to start our day of non-stop shopping! We all loved this breakfast - the crunchiness of the almonds, fresh pomegranate arils, and the chewiness of the oats...we were nourished to the hilt and armed with a new VISA card we faced the throngs at the mall like storm troopers! Christmas shopping on a full stomach - it's a good feeling!

Preheat oven to 375 degrees. Butter a 9-inch baking dish, at least 3-inches deep. In a large bowl combine oatmeal, almonds and pomegranate arils. In a small bowl combine milk and eggs, mixing well. Pour milk mixture over oatmeal mixture and stir. Stir in melted butter. Bake in center of oven for 40 to 45 minutes or until top is golden brown and center is set.

Serve with additional milk (or cream!) and be sure to warm the milk first, it's much better that way. The boy ate his serving with maple syrup on top - it was delish that way, too! Serves 6 to 8.
