Baked Lamb Shanks With Tomato Sauce

Ingredients

  • 6 x Lamb shanks (3/4 lb each, Trimmed of fat) Olive or possibly corn oil
  • 2 med Onions (cut in 1/4" slices)
  • 1 tsp Allspice
  • 1/2 tsp Nutmeg
  • 1 x Teapoon salt
  • 1/2 tsp Pepper
  • 3 c. Minced canned tomatoes

Directions

  1. Lightly coat lamb with oil; arrange in 13*2*9" baking dish. Bake in 450 oven for 30 min, turning once. Remove lamb from oven; reduce heat to 350. Place onion slices over lamb; sprinkle with allspice, nutmeg, salt & pepper. Pour tomatoes proportionately over all. Return lamb to oven; bake 2 hrs, basting frequently.
