Ingredients

  • 1 lb haddock or possibly cod fillets
  • 1/4 c. fresh lemon juice
  • 1/2 tsp vegetable oil
  • 2 x garlic cloves, chopped
  • 1/4 c. Chicken Broth Pepper to taste
  • 4 lrg mushrooms, sliced
  • 1 med -size carrot, grated
  • 2 tsp dry leaf mint

Directions

  1. Preheat oven to 350 degrees F. Rinse fish and pat dry. Place fish fillets in a 9 inch casserole dish, add in lemon juice and turn fish to coat well. Marinate 10 min. In a small non-stick skillet, heat the oil, saute/fry garlic and then spoonover fish. Add in remaining ingredients to casserole dish. Cover with foil and bake 25 to 35 min, till fish turns from translucent/soft to opaque.
