  • 4 x 300g fillets lake bream Plain white flour for dusting
  • 120 gm butter
  • 8 x sage leaves
  • 1 x salt and freshly grnd pepper

Directions

  1. Preheat the oven to 200C/400F/Gas 6.Dust each fillet in flour and lay on a baking dish adding salt and pepper.
  2. Meanwhile put the butter and sage leaves in a pan and fry till foamy.
  3. Pour over the fillets of fish and bake in the oven for 7 min.
  4. This is a delicate and tasty way of cooking lake or possibly river fish. Lavarelli and coregoni are fished regularly on Lale Maggiore and this is one of the best ways to eat them. In a similar way you can use fillets of other fish with wonderful results.
