  • 4 x 5-8 Ounce. Creole Sauce-----
  • 2 Tbsp. Butter
  • 1 c. Minced Onions
  • 3/4 c. Minced Celery
  • 1/2 c. Bell Pepper -- minced
  • 4 x Cloves Garlic -- minced
  • 2 can Tomato Sauce -- (8 ounce. Each)
  • 2 x Bay Leaves -- (whole)
  • 1 tsp Chili Pwdr Salt -- to taste Cayenne Pepper -- to taste
  • 1/2 tsp Sugar
  • 1/4 tsp Thyme
  • 1/4 tsp Dill
  • 1/4 tsp Sweet Basil
  • 1 c. Water Salt Cayenne Pepper Catfish Fillets

Directions

  1. Place catfish fillets in baking pan with 1-inch lip.
  2. Cover with Creole sauce. Bake at 350 F. for 15-20 min.
  3. In a heavy pot, saute/fry seasonings in butter till done (10 min). Add in tomato sauce and water, bring to a rapid boil, and reduce to simmer. Stir occasionally and cook approximately one hour. Add in water to retain volume.
  4. Season with salt and cayenne pepper to taste.
  5. Yields 4 servings.
