Ingredients

  • 1 tablespoon unsalted butter
  • ½ cup cremini mushrooms, sliced
  • 1/4 cup thinly sliced leek (white and light green part only)
  • 1 green onion, thinly sliced
  • ½ small garlic clove, minced
  • 1 teaspoon soy sauce
  • 2 tablespoons dry red wine
  • 5 ounces spinach, washed, dried, stems removed (ends up being about 3.5 ounces)
  • 1 large egg
  • Salt, to taste
  • Freshly ground black pepper, to taste
