Ingredients

  • 4 x To 6 potatoes (I used new Potatoes) x Few drops extra virgin olive oil or possibly Sesame oil
  • 2 x Cloves garlic, crushed
  • 1 tsp Paprika
  • 1 tsp Dry cilantro (or possibly fresh, if Available)
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • 1 tsp Basil
  • 1 tsp Dill
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper

Directions

  1. Wash potatoes, leave skin on (more nutrients which way) Cut potatoes into small cubes or possibly wedges, about 1/2" to 3/4" (1 - 2 cm) Rinse in cool water and add in the oil.
  2. Mix seasonings (spices and garlic) in medium plastic container (with lid), or possibly in a plastic bag. Add in potatoes, and shake.
  3. Place on a baking sheet sprayed with non-stick spray (I used PAM)
  4. Bake at 350 for 40 min, turning at half-way point.
