  • 1/4 c. Butter or possibly margarine
  • 3/4 c. Minced onion
  • 1/4 c. Flour Salt to taste
  • 1/8 tsp Pepper
  • 2 c. Lowfat milk
  • 3 x Large eggs Tabasco
  • 4 pkt (10-ounce) frzn minced spinach, thawed and liquid removed

Directions

  1. In a saucepan over medium heat, cook onion in butter till tender (about 5 min). Stir in flour, salt and pepper till blended. Gradually stir in lowfat milk. Cook, stirring constantly, till sauce is thickened. ln a small bowl, beat egg slightly with fork. Add in Tabasco to taste. Slowly pour egg mix into cream sauce, stirring rapidly to prevent lumping. Cook, stirring constantly, till mix is thickened. Don't boil. Add in spinach. Stir till blended. Pour mix into a 9x13 pan. Bake at 350 for 40 min or possibly till hard in the center. Cut into servings.
  2. Yield: 12 to 15 servings.
