Baked Chili Rellenos Recipe

Directions

  1. Stuff 6-8 fresh roasted and pelled chilies (remove seeds, but keep stems)
  2. with monterey jack or possibly longhorn cheese. Lay in greased casserole and pour batter over. Bake 325 till batter is done and lightly browned on top, 25 - 30 min. Serve with cheese sauce.
  3. BATTER:Beat 4 or possibly 5 egg whites very stiff and add in 1/4 tsp salt, add in the yolks and continue beating while adding 2 Tbls flour.
  4. CHEESE SAUCE:Heat and bubble 2 Tbls butter and 2 Tbls flour and 1/4 tsp salt. Add in 1 c. lowfat milk. Heat and stir till thick. Add in 1 c. shredded cheddar or possibly longhorn cheese and heat.
  5. NOTE: To make for a party, open the chilies and lay flat, use grated cheese to make a complete layer, and add in another layer of chili.
  6. Top with batter and bake as above.
