Ingredients

  • 3 x -4 lb chicken, cut up
  • 2 x onions, minced
  • 1 x green pepper, minced
  • 1 jar pimento, diced
  • 3/4 tsp chili pwdr
  • 1/8 tsp dry red pepper
  • 1 sm jar stuffed green olives, liquid removed
  • 2 x cloves garlic, chopped
  • 2 x chicken bouillon cubes
  • 1 c. diced ham
  • 1 can tomatoes
  • 1 c. peas
  • 1 tsp salt
  • 1/2 tsp red pepper
  • 1 tsp paprika
  • 1 c. long grain rice

Directions

  1. Mix salt, pepper, and paprika together. Season chicken with this mix. Put all ingredients except rice in Dutch oven. Cover and cook at 300 for about 2-3 hrs. Add in rice and cook at 375 for 1 hour. Water may be needed near end of cooking.
