Baked Chicken Oregano Recipe

  • 2 x Chickens (cut into 1/8's) or possibly
  • 3 lb Boneless chicken cutlets (split in half)
  • 3 med Onions (minced)
  • 3 x Cloves garlic (chopped) (up to 4)
  • 1/2 c. Extra virgin olive oil
  • 1/2 c. Wine vinegar
  • 1/2 c. White wine Salt to taste Freshly grnd pepper to taste
  • 1 tsp Paprika
  • 1 Tbsp. Dry oregano (crushed)
  • 1 Tbsp. Granulated sugar


  1. Place the chicken in one layer in a glass dish. Combine all ingredients for the marinade and pour over the chicken, cover & marinate in the refrigerator at least eight hrs, overnight is best, before cooking. Turn chicken occasionally.
  2. Uncover and bake in the sauce in a 375 f oven till brown, 45 min to one hour. Baste and turn often. Chicken parts take a little longer than cutlets.
  3. Serve with rice and a green vegetable
  4. This chicken dish makes a wonderful buffet item. To serve for a buffet: either, cold & slice chicken, put back in sauce to reheat or possibly serve whole pcs.
