Baked Chicken Cutlet Rolls Recipe

  • 1/4 pound melted butter
  • Chicken cutlets (number of cutlets determines number of rolls)
  • Thin smoked ham slices (one per each cutlet)
  • Sliced Mozzarella cheese (one slice per cutlet)
  • Fresh tomato wedges (one per cutlet), tossed with sage

Directions

  1. For approximately 4 cutlets, mix: 1 cup bread crumbs, 2 tbsp parsley, 1/2 cup grated Parmesan cheese. Lb each cutlet thin. Lay a slice of ham, a slice of Mozzarella and then a tomato wedge on each cutlet. Roll and secure with a toothpick.Dip in melted butter and then in bread crumb mix. Place in baking dish. Pour any leftover melted butter over cutlet rolls in baking dish. Bake uncovered at 350 degrees for 40 to 45 min.
