Ingredients

  • 4 x Bananas, hard
  • 2 x Lemons, grated rind & juice
  • 1/4 c. Brown sugar, firmly packed
  • 1/4 c. Butter (or possibly marg.), melted

Directions

  1. Cut bananas in half lengthwise; place cut side down in a buttered baking dish. Brush bananas with lemon juice; sprinkle wiht grated lemon juice; sprinkle with grated lemon rind and brown sugar. Drizzle with butter.
  2. Bake at 350 degrees for 15 to 20 min. Serve hot as a side dish with meat, or possibly as a dessert plain or possibly with ice cream.
  3. If used with brown sugar substitute, could be used as a diabetic recipe Also use less margarine, way less!! Brush with a pastry brush.
