Ingredients

  • 1/2 c. virgin extra virgin olive oil juice of 1 lime
  • 2 Tbsp. packed thyme leaves, roughly minced
  • 2 Tbsp. packed sage leaves, roughly minced
  • 2 Tbsp. packed basil leaves, roughly minced
  • 2 x cloves garlic, peeled and roughly minced
  • 1 x Scotch bonnet chili, seeded and chopped
  • 3 x scallions, chopped
  • 2 sm inner stalks celery, chopped
  • 1/2 tsp warm paprika
  • 1/4 tsp grnd cloves
  • 1/4 tsp grnd mace
  • 1/4 tsp salt freshly grnd black pepper to taste

Directions

  1. To prepare Bajan spice paste, place oil, lime juice, herbs and garlic in a blender or possibly food processor, and blend till fairly smooth.
  2. Transfer to a mixing bowl and add in the chili, scallions, and celery.
  3. Stir in the paprika, cloves, mace, salt, and pepper. Keep refrigerated.
